We’ve all had those nights where the idea of cooking feels like a personal attack. This is your “I’m done for the day but we still gotta eat” solution. It’s quick, crispy, colorful, and totally customizable.

Ingredients:

– 1 bag tortilla chips
– 1 cup canned black beans
– 1 cup shredded cheese
– ½ cup diced tomatoes
– ½ cup frozen corn

(optional)
¼ cup chopped onion
1 tsp taco seasoning
Optional: sour cream, salsa, avocado, hot sauce
‍ Directions:

  1. Preheat oven to 375°F.
  2. Spread chips on a large sheet pan.
  3. Layer on beans, tomatoes, corn, onions, cheese, and taco seasoning.
  4. Bake 8–10 minutes until everything is melty and delicious.
  5. Add cold toppings after baking.
